Step One
Preheat oven to 250°F. Line 2 baking sheets with parchment paper; set aside. Using sharp knife, slice potatoes lengthwise into 1/4-inch thick slices or crosswise into 1/4-inch thick coins for smaller treats.
Step Two
Place sweet potato planks or coins on prepared baking sheets. Bake about 3 hours or until fairly dried out and chewy, turning once. Remove from oven and transfer sweet potato chews from the pan to a wire rack to cool completely.

Transfer to an airtight container and store in the refrigerator up to 2 weeks.
